[IDV #EGE-141477]: sub-secting grids

This is on our list of things to do, but will most likely not
make it into the 2.3 release.

You could add the names to the U and V aliases using the 
Tools->Parameter Aliases menu.  That would allow you to do the
subsetting when you select the field and display.

Different fields can have different levels which is why we can't
subset on particular levels at the data source.
