Hi Christy, I'm on vacation but now back in email access. You need to do two things: read your file into a VisAD FlatField object, and create a Display for it. The examples in Sections 3.1.14 and 3.2.13 of the Developer's Guide should help with the first, and some of the code in examples/Simple.java and examples/DisplayTest.java should help with the second.
