This is actually a bit tricky -- as there is that, IIUC, there is an
"internal" fill value set in netCDF that should be kept in sync with the
attribute. I may be confusing things, as that "internal" one may only be a
default, but there have been issues with them getting out of sync.
If NCO or CDO has a "change fill value" command, that would be great -- I'd
look for that.

agreed, I like NaN as a fill value, but there's a downside -- NaN dpes not
equal NaN, so code that does:
if something == fill_value:
Will not work. It can be tricky.
