I can't help with AWIPS2 but to set colors in GEMPAK for H/L symbols use HILO:

If you are running say gdplot2, then type: phelp hilo

Hi all,

Is it possible to change the colors of the pressure systems?  For example, Blue 
Highs and Red Lows.  Also, how do I color fill the fronts in AWIPS2.
