Yes, appendix C of the User Guide provides GEMPAK Symbols, lines and Markers.
For version 5.4, the user guide is in postscript format files under
doc/User_Guide/ (appendix c is apxC.ps). Weather cymbols are decscribes
on pages C-4 and C-5.

The 5.6, the User Guide is provided in PDF format in the $NAWIPS/doc directory
and online as well at:
http://www.unidata.ucar.edu/packages/gempak/GEMPAK5.6/doc/pdf/
