If you want the data in ASCII text form as comma separated values, you can use
the ncdump utility program, which is part of the netCDF software package. You
can import such data represented as comma separated values into spreadsheets to
do calculations.

Alternatively, many of the software packages described here:
  http://www.unidata.ucar.edu/software/netcdf/software.html
can do data analysis, not just graphing and viualization. Examples of analysis
programs that can read netCDF data include Octave, CDO, NCO, Ferret, GrADS,
MATLAB, IDL, Perl, Python, R, or Ruby.
