Yes.  Please investigate the AXFORM utility in McIDAS (i.e., run HELP AXFORM
from a McIDAS session's Command and Text window or refer to the AXFORM page
in the Unidata McIDAS-X User's Guide).  AXFORM can dump out some or all of
the data in an image into ASCII (and binary) format.  As for how you would
use this in Matlab, I can not say.

There is certainly an API for reading the any/all data in McIDAS if you want
to create your own application.  Please have a look through the McIDAS
Programmer's Reference Manual:

It sounds as if AXFORM might be sufficient to get you going, however.
