What look are you after?

There is a trade off between using shading, which
shows shape at the expense of graying the colors
a bit, and texture mapping without shading, which
has pure colors but doesn't show shape so well.

Or do you have a problem with the interpolation of
colors that bleeds colors up and down a bit in the
vertical? In that case, you might try using color
filled contours (see visad/examples/Test37.java for
an example - click the "fill" box on the GUI to
invoke color filled contours). With a large data
set this will use lots of memory and time.
